Here’s a quick recipe that is perfect for the spring season, also appropriate for all doshas!
Ingredients for 2-3 serves)
1/4 wedge of organic pumpkin
3 x small organic carrots
1.2 organic fennel
2 x baby organic leeks
1 can of organic cannellini beans
cumin and coriander seed powder
3 x bay leaves
ghee
300 ml stock of your choice (vegetable, chicken or beef bone broth)
Method
Put on your fave music and get in a good mood
Saute sliced leaks with your spices in the ghee
Roughly chop all other veggies and continue to saute
When vegetables are semi-cooked, add beans, leaves and stock and simmer for 20-30 mins.
When fully cooked, remove bay leaves and blend to desired consistency
