Spring self-love soup

Here’s a quick recipe that is perfect for the spring season, also appropriate for all doshas!

Ingredients for 2-3 serves)

  • 1/4 wedge of organic pumpkin

  • 3 x small organic carrots

  • 1.2 organic fennel

  • 2 x baby organic leeks

  • 1 can of organic cannellini beans

  • cumin and coriander seed powder

  • 3 x bay leaves

  • ghee

  • 300 ml stock of your choice (vegetable, chicken or beef bone broth)

Method

  1. Put on your fave music and get in a good mood

  2. Saute sliced leaks with your spices in the ghee

  3. Roughly chop all other veggies and continue to saute

  4. When vegetables are semi-cooked, add beans, leaves and stock and simmer for 20-30 mins.

  5. When fully cooked, remove bay leaves and blend to desired consistency

  6. Enjoy and eat with love and gratitude!
